Monaco's very first sports bar and family restaurant STARS'N'BARS (founded by Kate and Didier in 1993) have made environmental awareness, well-being and personal development a top priority, while offering a diverse menu based on home-made, organic and locally-sourced ingredients.

 

STARS'N'BARS is a vital player in the sustainable development of the Principality, and plays an active role in events such as the Monaco Ocean Week, the Ever Salon, The Africa Eco Race, The E-Prix, to name but a few.

 

Ecological initiatives are a key concern of the restaurant, and they were the first to say a resounding no to plastic straws, plastic water bottles, single-use coffee cups and to install a composter on their terrace!

 

STARS'N'BARS has reduced its carbon "food print"- by launching meat-free days, only serving Mr. GoodFish sustainable fish and offering filtered water bottled on site.

Today, the family restaurant serves as an EcoHub with:

 

  • An active recycling program for paper, glass, batteries and electronics
  • A terrace on the port surrounded by a 120 square metre vegetable garden.
  • Workshops, meetings and monthly conferences based around ecology, personal development, well-being and nutrition take place inside the restaurant.
  • 100% of the restaurant's electricity is sourced from clean renewable energy, and the restaurant also enjoys its own electric vehicle fleet.
  • Cleaning of the port and the surrounding area with local students in 2017. Creation of a partnership with Yachting Pages Media Group for the Monaco Yacht Show 2018, to raise awareness on trash, sometimes left behind during such events; proving that ecology and luxury can indeed go hand in hand.
  • Monacology, an association cofounded by STARS'N'BARS and environmentalist Olivier Arnoult in 2004 which aims to raise children's awareness of the environment.
  • In 2017, Stars'n'Bars and Monacology welcomed Yann Arthus Bertrand, in partnership with the Grimaldi Forum and the Oceanographic Museum.
  • Activities and games for children regarding recycling, clean energy, reducing waste, and protecting the sea.

Brice Cachia serves up Monaco's most delicious, and sustainable, oysters

If you love your food but love your planet too, you will always be on the lookout for restaurants serving delicious dishes that have the minimum adverse impact on the environment. If you live in Monaco, then you’re lucky! Les Perles de Monte Carlo is on your doorstep.

 

This oyster bar, located at the very tip of Port de Fontvieille’s pier, is the brainchild of Brice Cachia and Frédéric Rouxeville, both certified biologists. Their aim, when founding the oyster bar in 2011, was to refine oysters and other fine seafood products in a region where traditional oyster farming was almost inexistent and serve it locally.

 

To experience their high-quality seafood, including clams, caviar, lobsters, bass and sea urchins, and sample their range of organic wines, visit the oyster bar from Monday to Saturday and enjoy the ambience of its coastal location just below the Prince’s Palace. Alternatively, you can order take-away or hire the team to cater your event. However and wherever you taste their food, you can be sure of a delicious experience.

 

Organic farming on the rooftops of Monaco

If you’re interested in growing your own fruit and vegetables and eating more sustainably, Terre de Monaco can help.

 

The company is on a mission to establish urban agriculture by promoting the growing of fruits, vegetables, herbs and edible flowers, both in the ground and on the rooftops of buildings in and around Monaco—and other countries. They are nothing if not ambitious!

 

They are committed to organic gardening, package and waste reduction, and the growth of older ‘forgotten’ varieties to “put diversity back on the plate.” All their seeds are AB certified, assuring customers of their product quality and a respect for nature, but it’s not all about fruit and vegetables. Terre de Monaco also offer beehive installation and management services.

 

The company design kitchen gardens for anyone who has some roof or balcony space to spare and also offers maintenance and courses throughout the year in exchange for a flat rate. If yours is a larger garden, Terre de Monaco may offer maintenance in exchange for the right to sell any produce that’s excess to your personal requirements under its own label.

Harvesting delicious produce straight from your roof isn’t the only advantage to having a kitchen garden up there, though. The garden is good for the environment, absorbing rainwater and limiting its loss, and good for your roof and home too, protecting your roof from temperature changes and helping to maintain a pleasant temperature in the rooms below.

 

The team also work with restaurant chefs to develop a kitchen garden that suits their needs and style of cuisine. With projects in France, Belgium and Switzerland, their experts offer their services to architects, real estate developers and landscapers too, working with them to build custom-made ecosystems and providing long-term support for sustainable growth (in both meanings of the word!).
